The new dessert from the famed Parisian pastry chef, served exclusively at the Café Dior by Pierre Hermé in Seoul, explores the panoply of flavors contained within the humble mandarin.
For Pierre Hermé, “Infiniment” is the term reserved for creations shaped around a flavor and its variations. Infiniment Mandarine strikes the perfect balance between the sweet sharpness and delicate bitterness associated with this citrus fruit.
A spoon of crème de mandarine in a glass bowl is covered with lemon peel, the fruit a feature. A fluffy cloud of mandarin whipped cream is added and topped with a jelly of the same fruit.
The bowl is then sprinkled with chunks of mandarin shortbread. Lastly, a scoop of ice cream, some meringue sticks, and a mandarin wafer biscuit lend the delicious finishing touches.
