For Pierre Hermé, “Infiniment” is the term reserved for creations shaped around a flavor and its variations. Infiniment Mandarine strikes the perfect balance between the sweet sharpness and delicate bitterness associated with this citrus fruit.
A spoon of crème de mandarine in a glass bowl is covered with lemon peel, the fruit a feature. A fluffy cloud of mandarin whipped cream is added and topped with a jelly of the same fruit.
The bowl is then sprinkled with chunks of mandarin shortbread. Lastly, a scoop of ice cream, some meringue sticks, and a mandarin wafer biscuit lend the delicious finishing touches.
